ith the change of the seasons upon us, and the lush green of the landscape =
giving way to greys and browns, it seems an appropriate time to discuss som=
ething that most food marketers would prefer not to: the slaughter of anima=
ls. <br /><br />
In July 1980, I travelled with my two younger brothers behind the Iron Curt=
ain to visit my father’s family in Hungary. We were staying in my Gra=
ndmother’s village, Bog=C3=A1d. One morning I awoke to a racket. A pi=
g was strung up by two men and its throat was cut. I will never forget the =
pools of blood, or the pig’s shocked expression. The day before I had=
fed the playful creature an apple. Five hours later we were eating a celeb=
ration meal and pork goulash (P=C3=B6rk=C3=B6lt) was on the menu. My brothe=
rs and I were shocked – no one else batted an eyelid. <br /><br />
We are so far removed from the slaughter process now, that it’s incre=
dible to think that in the 19th century, poultry was ‘walked’ i=
nto London from East Anglia, and that Smithfield Market was built to contai=
n the mess and mayhem of thousands of animals being taken to slaughter ever=
y month in the capital.<a href=3D"http://thefarm.farmison.com/t/l?ssid=3D30=

n detail how cities are built around food in her book, Hungry City, which I=
highly recommend for a historical narrative as to how food supply has evol=
ved. <br /><br />
I work closely with chefs and butchers, and I know the final stage of the a=
nimal’s journey is crucial for better meat. It should be quick, painl=
ess, and not scare the animal. Our poultry supplier, Dr Paul Talling of Loo=
se Birds in Harome once said to me, “I never hurt animals, I only kil=
l them.” <br /><br />
Studies have shown that a stressed animal produces adrenaline, which change=
s the acidity of the meat, and can drastically affect the quality upon cook=
ing. Of course, logistics and hygiene have come a long way since Victorian=
times. That said, while consumers know about how an animal lived, consumer=
s today lack knowledge as to the final stages of an animal’s life. I =
think it is important consumers do know. <br /><br />
It’s always been important to me to see the slaughterhouses a farm or=
producer uses, since seeing that pig being slaughtered as a boy. We cannot=
be blas=C3=A9 about death - we as the public must face in to it. I fully b=
elieve it was an indifferent attitude to death and a culture of buck passin=
g that led to the horse meat scandal. When I went to McIntyre’s (the =
slaughterhouse we use in Wensleydale) for the first time, it was the atmosp=
here of calm that surprised and reassured me we were giving our business to=
the right place. <br /><br />

strong></a> published a report on the future of small abattoirs, in relatio=
n to transporting livestock. Their findings were stark. During transportati=
on was when welfare breaches were far more likely to occur, as opposed to o=
n the farm and at the slaughterhouse. <br /><br />
Although large and small abattoirs have a similar average journey distance,=
the ranges of journey time differed dramatically between large and small. =
Some animals travelled nearly 1000km to go to a larger abattoir. However, t=
he industry has only consolidated. In 2018, 32 abattoirs in England slaught=
ered 88% of all the sheep, while just 19 abattoirs slaughtered 73% of all c=
attle. <br /><br />
It seems unlikely there will be a renaissance in smaller abattoirs soon, ou=
r business in Ripon is fortunate. All of our farms are local to us, and our=
farms are close to the abattoirs they use. The vast majority of our produc=
e is then stored here in Ripon, and cut to order. <br /><br />
One possible solution that has been mooted is mobile abattoirs, that could =
visit remote farms in upland areas distant from slaughterhouses. Solutions =
like this, I believe, need to be matched by consumer awareness of industry =
practices. Food marketers are keen to stress how the animal lived, but few =
will be able to tell you how an animal died. If demand for ethical meat con=
tinues to grow, it is a conversation that needs to be had. Watch this space=
